Huso, NYC's Newest Speakeasy Caviar Restaurant

Beneath the glass counter at Marky’s on Madison, a display of caviar and related goods—truffle butter, smoked fish, canned sea urchin roe in brine, loaves of foie gras—glitters for Upper East Side shoppers’ most dignified dinner parties. The Florida-based caviar dynasty transplanted to NYC this year but is now more than just a store. Behind a thick curtain lies Huso, a speakeasy caviar restaurant that is newly open for a shoppable brunch experience. In developing the menu, the Marky’s team tried each caviar variety with each dish to determine the best pairings. The resulting combinations include Maine lobster scrambled eggs on a toasted crumpet with Russian Royal Osetra amber caviar, and beluga potato salad for dinner. (Marky’s is the only retailer in the U.S. legally authorized to sell beluga huso sturgeon meat.)
