Following the debut of Offshore 9 Rooftop Lounge, The Waterfront Beach Resort, a Hilton Hotel welcomes Huntington Beach’s newest fine dining destination—Henry’s (waterfrontresort.com/dining/henrys-restaurant). An homage to railroad titan Henry Huntington, the seaside concept offers organic, seasonally driven fare. “Working closely with farmers, fishermen and cattlemen, we have been able to build a menu that showcases amazing products,” says chef de cuisine Kenny Seliger, who was inspired by summers spent in Germany cooking with his grandmother. Highlights include Mussels on the Rocks with a bok choy puree; Mangalitsa pork chop with fresh wasabi root and black sea salt; and inventive sweets like pomegranate mousse with chocolate crumble—all teamed with a vast California-centric wine list. As Seliger says, “Come with an open mind and be ready for a fun experience.”
