Venturing to the suburbs these days isn’t as much of a culinary risk as it once was, especially if Ian and Eric Hilton are leading the venture. The duo behind such smash hits as El Rey, Marvin and Chez Billy Sud recently opened Parc de Ville in the Mosaic District. The 5,100-square-foot space seats more than 100 guests in the main dining room and bar area, plus another 100 on its 3,150-square-foot rooftop. The cuisine is classic French bistro fare with a twist from executive chef Brendan L’Etoile. Early menu favorites include jambon persilleĢ (pressed pork shank and parsley terrine, sauce gribiche, cornichons); crevettes avocat (poached prawns, avocado, grapefruit, Marie Rose sauce); and boudin blanc: delicate pork sausage, pommes puree, roasted apples, cider). The wine list—you guessed it, heavy on French pours—represents every region in the country and an impressive mix of varietals.
