It was founded by expert Enrique Tomás, who literally wrote the book on Iberian ham: Jamón para Dummies. The specialty of the house is produced from Iberian pigs raised on acorns, resulting in meat with ultra-silky texture and melt-in-your-mouth umami bomb flavor.
