When one of the city’s most acclaimed haute cuisine chefs opened his first solo restaurant and named it Tbd…, gourmands immediately took notice. Vikram Garg, who left his longtime head toque post at the luxe Halekulani several years ago, has popped up at the other end of Waikiki Beach with a menu of sophisticated global fare. Sea scallops atop Hamakua mushroom risotto get raves, as do steaks cooked in a tandoor oven. Garg’s dishes combine touches from his native India with ingredients and techniques from virtually every continent. The space manages to be whimsical and modern at the same time; tucked inside the Lotus Honolulu, in the shadow of Diamond Head, it feels like a posh hideaway. And, finally, the name: It’s called Tbd… because the menu is always subject to change.
