The legendary Champagne Laurent-Perrier house, established in 1812, has been a leader in innovation for many decades. This is not to say that the female- and family-owned business is prolific in its new releases; truly, any new bottling here is cause for celebration. The new Blanc de Blancs Brut Nature NV ($90), which appeared late this fall, is just the thing for stylish holiday fetes. With 100% chardonnay, generally Laurent-Perrier’s dominant grape, the wine has a wonderful crispness, and as a zero-dosage Champagne—no extra sugar—it makes for an ideal aperitif. Starting with oysters? Or perhaps shrimp cocktail? Those should match perfectly with the lemony zing on the wine’s finish. Couple that with the elegant bottle shape, and the gorgeous white-gold color in the glass, and your party just got a little more effervescent.
