After executive chef Gilles Schreiber of AG at The Ritz-Carlton, Atlanta found out that Banner Butter (bannerbutter.com) was made just 15 miles from the hotel, he knew he had to find a way to work it into the spot's heavily local and regional menu. Schreiber says it reminds him of French butter, and that's certainly a compliment, as he hails from Mutzig, a small town in Alsace, France. Proof Bakeshop
Kristin and Billy Allin's Proof Bakeshop supplies many places in town, including their own Bread & Butterfly (bread-andbutterfly.com), with the most sumptuous baked goods. Pancake Social
Anne Quatrano has been a big supporter of Atlanta-based creamery Banner Butter, even selling its butters (look for the compound butters, like balsamic fig and caramelized onion, or cinnamon, cardamom and ginger) at her Star Provisions (starprovisions.com). There might not be a more apropos place to consume it, though, than Quatrano's new Pancake Social at Ponce City Market.
